After being diagnosed with high cholesterol at the age of 21, Ms. Kaufman knew it was time to make some healthy changes in her life. She collaborated with her doctor on wellness and prevention methods, and soon became passionate about achieving optimal health and helping others do so as well. Today, she has three decades of experience in the individualized counseling field and has established herself as a credible motivator in helping people adopt realistic healthy lifestyle changes.

Ms. Kaufman is the founder and executive director of Nutritional Health Consultants, Ltd., where she assists individuals who need counseling regarding weight, blood pressure, diabetes, high cholesterol and menopausal matters. She also specializes in primordial prevention and risk factor management for heart disease. Her innovative methods include kitchen consultations, healthy cooking classes, and informative grocery-shopping trips. She attributes her success to her dedication to her clients' health and non-judgmental approach.

In 1988, Ms. Kaufman graduated from the University of Illinois with a Master of Science in adult fitness. She is a certified exercise specialist, licensed dietitian nutritionist and clinical lipid specialist, and is board-certified by the Accreditation Council on Clinical Lipidology. Her professional affiliations include the American Heart Association, American Dietetic Association, American Diabetes Association and National Lipid Association. A highlight of her career was serving as a health educator for an experimental program developed by Nathan Pritikin. In the years to come, Ms. Kaufman plans to continue growing her business, and educating her clients, physicians and allied health professionals. She is in the process of writing a lifestyle cookbook that helps people "choose well to live well longer."
